Vegetables: High Quality Low Value Foods

Food prices are generally low if the food is bought as ingredients and time is spent preparing the food. High food prices tend to be represented mainly by pre-prepared and niche luxury foods. Vegetables are particularly cheap in many countries, and when compared to other food represent excellent value for money. Vegetables such as carrots, potatoes, greens, onions and cruciferous vegetables are some of the cheapest foods that can be purchased. In addition to this, they are some of the most nutritious and healthy foods that can be consumed and make excellent ingredients when preparing dishes. If care is taken to incorporate them into meals and dishes with some imagination and culinary skill, they can be tasty and appetising. One of the main benefits of eating large amounts of vegetables is that they are low in energy, particularly sugars and fat, which makes them useful in weight management diets. While fruit has to be moderated die to high fructose content, vegetables can generally be eaten freely and without restriction.
