Is Vinegar A Forgotten Superfood?

High glycaemic index foods may be a contributory factor in the development of disease. High glycaemic index foods can cause disease because they negatively affect blood sugar and this can lead to the development of insulin resistance. Lowering the glycaemic index of meals can therefore be a significant strategy in the maintenance of good health. There are a number of ways to lower the glycaemic index of meals, including adding protein foods, reducing the amount of carbohydrate in the meal, consuming milk, and increasing the acid content of the meal. In terms of the latter, adding vinegar to foods may be an effective way to increase the acidity and thereby reduce the glycaemic index of a meal. This can significantly reduce the speed at which the carbohydrate is absorbed, and this in turn can reduce the risk of developing insulin resistance. Vinegar is effective in this regard because the increased acidity reduces the speed at which the food leaves the stomach, effectively preventing rapid absorption.
