Mushrooms are a unique group of foods that belong to the fungi kingdom of organisms. Biologically, mushrooms are the fruiting body of fungi and while some are poisonous many have important health effects. One health effect of mushrooms that has been particularly well studied is the immune stimulating properties of certain mushrooms including Lentinus edodes, Schizophyllum commune, Grifola frondosa, and Sclerotinia sclerotiorum may be particularly beneficial. These mushrooms may have particular tumour inhibiting effects that includes destruction of cancer cells via stimulation of T cells and macrophages. Mushrooms also appear to be able to stimulate cytokines which may have cancer protective effects. It is thought that the chemical responsible for these effects is a group of polysaccharides called (1→3)‐β‐D‐glucans, which interact directly with the immune system in various ways. Consuming a range of mushrooms particularly those mentioned may therefore have significant health benefits.
